Responsibilities

In charge in the entire kitchen operations and overseeing front of house operations leading a team of 4 chefs, and 3 front of house full time staff.

Design menus for the restaurant and functions. Create and write the recipes for the dessert menu.

Oversee the running of the kitchen to maintain high standards of hygiene and food quality, whilst being conscious of wastage and costing of dishes.

Training junior chefs.

Responsible for the daily orders of produce for the upkeep of kitchen including food, cleaning chemicals and equipment when necessary.

Achievements:

Within first month reduced the monthly food cost of the restaurant by 4.5% by actively monitoring ordering and running a daily food cost, ordering vs. daily sales tracking system, alongside closely monitored ordering and wastage control.
